Peridot is a wonderfully bright and sunny dining room offering a superb menu of Modern British dishes including confit of duck with pear mash and a ginger and honey wine pan fried salmon fillet with pearl parsley risotto and saffron sauce and chicken and artichoke terrine with pineapple and black pepper chutney. The Scottish Angus beef from the grill is divine choose from rib eye, sirloin or fillet. Service is outstanding at Peridot, in keeping with the general tine of the hotel.
